Chocolate "cup" cakes
1 box cake mix – any flavor
1 container frosting – any flavor
6 small mugs (a great way to get rid of mugs you no longer want!)
Prepare cake mix according to box directions. Spray mugs with cooking spray. Fill batter halfway up each mug. Bake 2 ½ to 3 mins in your microwave on high. (Put a paper towel under the mug as it may overflow.)
Cool, frost, attach a plastic fork (I used a small rubber band), cover with a non-zipper baggie, and add a bow.
24 oz white chocolate chips
1 (14-oz) can sweetened condensed milk
Pinch of salt
1 tsp vanilla extract
1 ¼ cups crushed peppermint candies
Line a 9”x12” pan with parchment or waxed paper, allowing paper to hang over the sides
In a medium microwavable bowl, stir together chips, milk, and salt. Melt according to the directions on the white chocolate chips package
Stir in vanilla and 1 cup of peppermint candies
Pour into prepared pan – use a spatula to spread evenly
Scatter remaining candies on top
Chill in refrigerator until firm – about 2 hours
Using the overhanging paper, lift out the fudge and invert onto a cutting board. Peel off paper.
Slice into 1” squares and package in zip-lock bags. Tie with a colorful ribbon!
